Energy Bites- so easy a toddler can make it!

I have gone around and around on what my first “official” blog post should be about. I have so many recipes and ideas that I wish to share that I have been debating for over a week what to post/make first. While I was overthinking, and not writing, I finally came to conclusion that I should just share what I made today with my 2-year-old; the famous energy bites.

What I love about this recipe is that they are easy to make (see picture of 2-year-old). Plus they are a much better choice for those sweet cravings. Although we make energy bites in many varieties, my favorite remains in my original recipe.

Yields: approximately 2 dozen

All you need:

  • 1 cup dry oatmeal
  • ½ cup peanut butter
  • ½ cup ground flaxseed
  • ½ cup dark chocolate chips, chopped
  • 1/3 cup honey
  • 2 tsp. vanilla extract

All you do:

  • Combine all ingredients in a medium sized bowl.
  • Roll “batter” into balls to desired size. It might be helpful to chill batter prior to rolling into balls, however, it is not necessary.
  • That’s it! Now enjoy J

Other ingredients that may be used, but not limited to, included dried fruit, chopped nuts, chia seed, coconut flakes, M&Ms, etc.
