Day on the Plate

I follow many health and wellness influencers on social media and was inspired to write a “Day on the Plate”.  So if you ever wonder what this dietitian eats in a day….here is a quick look!

I am a the epitome of a grazer.  While nursing, my appetite goes through the roof!  I eat when I am hungry- which ends up being every couple of hours 🙂  Here is a play-by-play:

5:30 am: Start my day.  I normally pump and have two pieces of 100% whole wheat toast with peanut butter.  I also try to start my day off with a big glass of water!

8:00 am: After daycare drop off and my workout, I am usually ready for “second breakfast”.  This usually consists of Greek yogurt, 1/4 cup dried oats, and fruit (today I had a banana and a couple strawberries).

10:30 am:  I know this seems a little early for lunch, however, I teach nutrition webinars 2-3 days per week from 11:00-1:00 pm.  So I usually eat the first part of my lunch to get me through the lunch time rush.  This day consisted of some veggie curry with 1/4 piece of garlic naan.  My curry consisted of a premade curry sauce, sliced mushrooms, chickpeas, onions, and tomatoes on top of some quinoa (out of basmati!).

1:00 pm: This is when I finish my lunch.  Today I had a simple spinach salad with carrots and red peppers.  I had a side of Dorothy Lynch dressing (yes, I know there are better options but I really enjoy this dressing!)

3:00 pm: Getting in my midafternoon sweet tooth with some Fruit Club strawberries

5:00 pm: Per request from my daughter- breakfast for dinner!  Simple meal- scrambled eggs with spinach on a whole grain wrap.  I also topped with a little hot sauce.

7:30 pm: Popcorn with my little lady.  We usually wind down our night with a light snack.  Today we had lightly buttered popcorn and milk
