Onion Chutney and a Bonus Recipe!

I know, I know I say this every time but wow. I LOVED this recipe. Enjoy a twist on pizza by using onion chutney as the sauce! The chutney would also be great for bruschetta or on top cream cheese as a dip.

Please give it a try!

All you need:

  • 3 sweet onions, chopped
  • 1/4 cup olive oil
  • 2 Tbsp. minced garlic
  • 1/3 cup brown sugar
  • 1/4 cup balsamic vinegar
  • 1 tsp. parsley
  • 1 tsp. black pepper
  • 1 cup broth
  • 1-2 bay leaves

All you do:

  • In a sauce pan over medium heat, saute onions and olive oil until onions soften. About 10-15 minutes.
  • Stir in remaining ingredients and bring to boil. Reduce to simmer and cover.
  • Simmer for 30 minutes. After 30 minutes, stir and let simmer for about 30-45 minutes until the liquid is gone and you have a jam-like consistency.

And for the grand finale- the best pizza ever!

Pre-oven goodness

All you need:

  • 1 naan pizza
  • 1/4 cup onion chutney
  • 1-2 oz. blue cheese crumbles
  • handful of spinach chopped
  • 5-7 cherry tomatoes, halved (can also roast them for additional flavor!)

All you do:

  • Preheat oven to 425 degrees F. On a sheet pan, place the naan on the pan and toast in the oven for about 3-5 minutes.
  • Remove naan from the oven and top with the onion chutney, blue cheese crumbles, spinach, and cherry tomatoes. Bake for another 7-10 minutes until cheese has started to melt.
  • Most important step: ENJOY!
