Root veggies include, but are not limited to, sweet potatoes, carrots, beets, parsnips, radish, and onion. This is quick and easy recipe that you can throw in the oven while you prepare the rest of your meal. Also makes for easy meal prep!
Now I only had sweet potatoes, potatoes, and white radish available but the seasoning will still go well with any of the listed root veggies above!
All you need:
- Your favorite root veggies chopped. As stated, I used sweet potatoes (about 2 small), russet potatoes (about 2 small), and radishes (came from my parents’ garden so we used about 5 small ones).
- 2 tbsp. olive oil
- 2 tbsp. minced garlic
- 1-2 tsp. parsley
All you do:
- Preheat the oven to 425 degrees F.
- Spread your veggies on a sheet pan and drizzle with olive oil, garlic, and parsley.
- Bake for about 30-45 minutes until veggies are roasted. Stirring occasionally.
