Lower Sodium Teriyaki Quinoa-Meatballs

If you follow us on Instagram you know that we LOVE “snacks for dinner” and have this meal at least weekly. We usually do a variety of apps, veggies, and fruit. I try and make a different appetizer each week and this week feature some Asian-inspired quinoa-meatballs. Hope you enjoy them as much as we did!

All you need for meatballs:

  • 1 lb. lean, ground turkey
  • 2/3 cup quinoa, cooked
  • 2 green onions, thinly sliced or chopped
  • 1 egg
  • 1 tbsp. liquid aminos
  • 1 tbsp. olive oil
  • 1 tsp. Sesame seeds

All you do for meatballs

  • Preheat oven to 400F. Lightly oil a 9×13 baking dish.
  • In a large bowl, combine all ingredients well (best to just use your clean hands). Roll into about 1 1/2 inch balls and place on prepared baking dish.
  • Bake for 20-22 minutes or until meatballs are cooked through. While meatballs are baking, prepare your teriyaki sauce

All you do for teriyaki sauce:

This teriyaki sauce may look familiar- I have made it before! We were out of honey so we used brown sugar and added in sriracha to spice things up!

  • 1/2 cup liquid aminos
  • 1/2 cup water
  • 1 tbsp. minced garlic
  • 2 tsp. ground ginger
  • 1 tbsp. brown sugar
  • 2 tbsp. corn starch

All you do for teriyaki sauce:

  • Whisk all ingredients but corn starch together and bring to a boil. Turn off heat and whisk in corn starch until sauce has thickened.
  • Pour sauce over meatballs and top with additional green onion and sriracha sauce if you desire. Enjoy!
