Chickpea Salad Sandwich

If you are looking for an inexpensive meatless meal, look no further! This sandwich has great flavor and is packed with fiber! Enjoy!

All you need:

  • 15 oz. can chickpeas, drained and mashed
  • 1/4 red onion, minded
  • 1 stalk celery, minced
  • 1/4 cup shredded carrots
  • 1/4 cup garlic mayo
  • Whole grain sandwich thins
  • Additional toppings such as spinach, tomato slices, and relish

All you do:

  • Combine mashed chickpeas, red onion, celery, carrots, and garlic mayo in a large bowl.
  • Place a heaping amount on your sandwich thin (tip-toast your bread!) and top with any additional toppings
