- 1/4 red onion, minded
- 1 stalk celery, minced
- 1/4 cup shredded carrots
- 1/4 cup garlic mayo
- Whole grain sandwich thins
- Additional toppings such as spinach, tomato slices, and relish
All you do:
- Combine mashed chickpeas, red onion, celery, carrots, and garlic mayo in a large bowl.
- Place a heaping amount on your sandwich thin (tip-toast your bread!) and top with any additional toppings
