Cinnamon-Roasted Nuts

These make for perfect treat.  The best part about this recipe is that it makes your house smell divine!

All you need:

  • 2 egg whites
  • 2 tsp. vanilla extract
  • 3 cups of your favorite nuts (we did 1/2 almonds, 1/2 walnuts)
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 tbsp. cinnamon

All you do:

  • Preheat oven to 250F. Line a baking sheet with parchment paper.
  • Whisk egg whites and vanilla extract in a large bowl. Add in nuts and toss to coat. Stir in remaining ingredients until the nuts are well covered with sugar mixture.
  • Spread the nuts in a single layer on the prepared baking sheet. Cook for about 75 minutes, stirring every 15 minutes, or until coating is dry. Enjoy!
