In February we placed an order with Imperfect Foods (more on that later) and it there was a package of tempeh. This my first time preparing tempeh so I went with simple BBQ sandwiches with a yogurt-ranch coleslaw.
- Slice tempeh in strips and marinate in BBQ sauce for at least 10 minutes
- In a pan, lightly cook over medium heat until cooked through; about 3-5 minutes
- Take one bag of coleslaw veggies (or cabbage) and combine with 1/4 cup Bolthouse Farms ranch salad dressing
- On a French baguette, place a handful of coleslaw veggies layered with strips of tempeh.
That’s it! So easy. For this particular meal I paired with some oven-roasted sweet potatoes and pear slices.
