Hopefully the weather starts warming up soon so it will be too hot for soup but in the meantime, this easy lentil chili will do the trick. Bonus- this recipe is super easy on the budget.

All you need:
- 2 quarts of veggie broth (we make our own!)
- 1 lb bag of lentils
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 cup chopped onion
- 1 can no-salt-added diced tomatoes with juices
- 2 tbsp. minced garlic
- 1 tsp. paprika
- 1 tsp. chili powder
- 1 tsp. cinnamon
All you do:
- Place all ingredients in a large slow cooker. Stir to combine and cook on low for 8-10 hours.
