Lentil Chili

Hopefully the weather starts warming up soon so it will be too hot for soup but in the meantime, this easy lentil chili will do the trick.  Bonus- this recipe is super easy on the budget.

All you need:

  • 2 quarts of veggie broth (we make our own!)
  • 1 lb bag of lentils
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 cup chopped onion
  • 1 can no-salt-added diced tomatoes with juices
  • 2 tbsp. minced garlic
  • 1 tsp. paprika
  • 1 tsp. chili powder
  • 1 tsp. cinnamon

All you do:

  • Place all ingredients in a large slow cooker.  Stir to combine and cook on low for 8-10 hours.
  • Enjoy!
