Copy-Cat Gnocchi Soup

My favorite soup is Olive Garden’s gnocchi soup, especially with their unlimited breadsticks.  We have been making our own gnocchi lately and decided to give this soup a try.  Still happy with how well it turned out.

All you need:

  • 2 chicken breasts, chopped
  • 3 stalks celery, chopped
  • 1 cup shredded carrots
  • 1/2 medium onion, chopped
  • 1 Tbsp. minced garlic
  • 1 tbsp. olive oil
  • 4 cups chicken broth
  • 2 tsp. parsley
  • Approx. 2-3 cups gnocchi
  • 1 bay leaf
  • 1/2 stick unsalted butter
  • 2 cups skim milk
  • Handful spinach, chopped 

All you do:

  • In a stock pot over medium heat, add chicken, celery, onions, carrots, garlic, and olive oil.  Sauté until onion is translucent and chicken is cooked through.
  • Add broth to stock pot and bring to a boil for about 3-4 minutes.  Then add bay leaf and let simmer for 10 minutes.
  • While soup is simmering, in a small pot over low heat, melt butter and slowly whisk in milk. 
  • Turn heat off of soup and remove bay leaf.  Immediately add milk/butter mixture to soup. 
  • Stir spinach in soup until wilted and serve immediately.

Serve immediately with a breadsticks, a panini, or your favorite side salad.  Enjoy!
